HARVEST:
Grapes, hand-picked in small boxes, undergo a meticulous sorting process. Initially sorted on a first selection belt, they are then destemmed and subjected to a second round of sorting on another selection belt. Subsequently, they are carefully delivered into wooden vats for fermentation.
VINIFICATION:
The grapes, manually plunged by foot, undergo maceration for 10 to 15 days to ensure a gentle yet thorough extraction of aromas and high-quality tannins. Following racking, the wine briefly settles before gravity-feeding into lightly toasted French barriques (5% new), where it completes malolactic fermentation. After 12 months in barrels, it is transferred to cement vats for an additional 6 months of maturation before bottling.
TASTING NOTES:
Shimmering ruby with a slight garnet rim. On the nose, it opens with decidedly mature notes of dried plums, plenty of blackberries, and a hint of blackcurrant. On the palate, the tannin is finely woven, developing in multiple layers, alongside a sweet, well-integrated fusion that is long and smooth.
