The grapes for Ripaso Valpolicella Ripasso DOC Superiore are hand-picked in late October from vineyards situated in the hills of Valpolicella. The careful selection and slight drying process enhance the concentration of flavors and aromas, setting the foundation for a rich and structured wine.
VINIFICATION:
Following the initial fermentation, the wine undergoes the traditional "Ripasso" method, where it is re-fermented on the pomace of Amarone. This technique boosts complexity and body. The wine is then aged for two years in French oak barriques and stainless steel tanks, followed by an additional six months of bottle refinement.
TASTING NOTES:
With a deep ruby-red color and violet reflections, this wine reveals aromas of cherry, wild strawberry, and subtle spices. On the palate, it is full-bodied and smooth, with balanced tannins and a lingering finish, making it ideal for pairing with grilled meats, game, and aged cheeses.
